Monday April 20

Today was rainy and yucky - perfect for a Monday. I refuse to complain - the weekend was beautiful. I set my alarm for 7PM instead of 7AM. I'd call myself stupid, but it's the third time in the last week I've done it. This is beyond stupidity.

I had time to make myself a nice breakfast before rushing to work. Toasted banana muffies (homemade) with Justin's Maple Almond Butter, some sliced almonds, and banana slices. I also had some coffee (as if you're surprised - gotta have something to dunk my muffies in). At work I ate the rest of my banana from breakfast.
I ran some errands on my lunch hour - I wasn't hungry because breakfast was so late. Back at my desk, I had a nice pasta combo of whole wheat pasta, baked tofu, goat cheese, and a Green Giants veggie mix that had a Rosemary Butter sauce.
Someone brought in leftover Easter Candy - and before I knew what I was doing - this Cadbury egg was in my mouth. Turns out - Cadbury eggs are gross. I still ate the whole thing... and felt gross the rest of the day.
I had some Apple Cinnamon Herbal tea as I worked on some homework and played around on my computer..... I mean worked.
I didn't have an afternoon snack, so I was starrrving by the time I got home. I micro-steamed some broccoli & carrots, tossed with EVOO and a seasoning blend while I contemplated dinner.
I decided that cooking was not on my list of things I felt like doing so I microwaved a Roasted Vegetable Lean Cuisine pizza and had that with some baby lettuce tossed in a greek dressing.
Microwave meals are never that photogenic - I think I did good. lol.
And I think I'll end this on a rant (short rant) about the state of Me lately. I've been reverting back to old ways - bingeing, purging (sometimes - usually on the weekend) - because I'm putting junk in my body. Garbage in, Garbage out. On days when my eating gets out of control - I just stop taking pictures and skip blogging that day.
Eating crap is probably why I've been so tired lately with just about zero energy to work out. I don't know if it's my personal life (getting cut loose from my job, the potential start of a new relationship, semester at school ending, new semester starting, onset of spring, anticipation for summer, excitment over my upcoming Florida Vacation) or a real physical thing, but I need to cut the crap.
I've decided to get back to basics (which does seem to be a theme with a lot of the blogs I've been reading recently). Now, I know I'm not perfect, and I don't claim to be, but I really do need to nip this crazy eating of mine in the butt.
I'm reading a wonderful book by Elizabeth Gilbert called, "Eat, Pray, Love". I'm sure many of you have heard of it - I highly reccommend it. It's just what I need right now in my life. I'll save you the spirituality rant I've got going on inside me, but I will say this - I'm not generally a highly religious person and you don't need to be to enjoy this book. It's more about focusing on your own spirituality and faith from a more personal perspective and less of an organized religious faith perspective.
Okay - goals:
Get some sleep.
Eat REAL, GOOD food.
Smile.
Make it through the week.

Sunday April 19

Omelet stuffed with Mache lettuce, sundried tomatoes, carrots & goat cheese. Whole Grain Bagel with homemade Pumpkin Butter. Coffee. Yogurt + Granola + Sliced toasted Almonds
Open face sandwich on Whole Grain bread with Sundried Tomato Hummus, veggies, Baked Tofu, and Soy Pepperjack Cheese.
Sugar-free Cinnamon Roll pudding (not a fan - gave the rest to my mom).
Apple Cinnamon hot tea + homemade granola square. Breakfast for dinner - Blueberry Crunch cereal, yogurt mixed with cinnamon & flax seeds, pecan gronala + extra pecans, strawberries, and topped with whipped cream. Tasted very desert like.
I decided to make use of my chocolate Easter bunny. So I chopped him up and microwaved him.
Then took some strawberries...
Sprinkles....
And almonds.........And created some chocolate covered strawberries that were almost too pretty to eat... (Almost!!)
I ended up eating one of the Alomond ones. And now....... back into another work week. ^.^

Wednesday April 15

So, today I decided to buy myself a present - a new coffee maker! I've been wanting a new one for a while. It's so cute and compact and I can't wait to make my morning caffeine fix tomorrow. ^.^ Now to food - while reviewing my older blog posts, I found a slew of homemade muffins. I thought... hmm... I haven't baked muffins in a while. And I had some pumpkin sitting around, so I baked up a batch of pumpkin muffies with dates. I had some of those for breakfast spread with some Justin's Maple Almond Butter & homemade pumpkin butter then topped with a sprinkle of almonds and sliced banana.

And, of course, my last cup of coffe made with my old coffee maker.
(I had the rest of the banana on the side).Did some of this 'n that and then had this yogurt & granola thing on the way to work. It was overall very good, and convenient in a cute little package, but I wouldn't reccommend it as something to hold you over for a while. I was starrrving by lunch.
For lunch I had an oldie but a goodie - couscous salad with tempeh, broccoli, carrots, and sliced almonds mixed in a toasted sesame dressing.
I managed to say away from the chocolate chip cookies calling my name with their sweet sweet sugar content..... and got some homework done. Also got some cleaning up of my desk - I'm out of there at the end of the month if I didn't mention. (crycry).
A little later I had this fruit cup. It was kind of weird at first - pears in a acaci & blackberry juice - but once I was halfway through, I was in love.
Banged out some more work, and then headed home. I was once again super hungry, so I micro steamed some broccoli & tomaotes, topped with some greek dressing, and then snacked while I contemplated the main entree.
Me? Cook? Not tonight - Kashi entree to the rescue. I actually picked this one up with a coupon for a free meal I got off their website..

I topped it with some parmeseann once it came out of the microwave, and it was absolute perfection. Although, not worth the $3.49 the store was charging. Thank goodness for coupons.
Out of boredom/need for sweetness/I don't even know - I ate this clif kids Zbar. Chocolate Brownie. And MAN was it chocolatey. Very good. Kristy gives it a thumbs up!!

So much for in bed by 10..... I'm trying to train myself to get up earlier - I've got some early Panera shifts Friday & Saturday. Okay, okay....... I'm heading to sleep.

Overnight pumpkin oats:

Last night:

  • 2/3 cup oats
  • 1 cup light vanilla soymilk
  • 1/4 cup pumpkin
  • 2 T chopped dates
  • 1/2 T flax seeds
  • 1 tsp pumpkin pie spice


This morning:

  • Microwaved 2-3 minutes
  • Topped with:
  • 2 T plain yogurt
  • 2 T pumpkin butter
  • 2 T toasted pecans


Served with a cup of Maxwell House coffee.


After class, an apple.


Lunch pita:


  • White Bean Garlic Hummus
  • Tomato
  • Sundried Tomato
  • Carrot
  • Pickle
  • Tempeh
  • Soy Cheese
    Low sodium V8. Green tea.
    Dannon yogurt with sliced almonds.

    Half a granola bar...
.... then the other half.

Random dinner. Whole wheat bagel, white bean hummus, laughing cow cheese, broccoli/carrot/tomato, and a hard boiled egg. I need to go grocery shopping. lol.
