Overnight pumpkin oats:
Last night:
- 2/3 cup oats
- 1 cup light vanilla soymilk
- 1/4 cup pumpkin
- 2 T chopped dates
- 1/2 T flax seeds
- 1 tsp pumpkin pie spice
This morning:
- Microwaved 2-3 minutes
- Topped with:
- 2 T plain yogurt
- 2 T pumpkin butter
- 2 T toasted pecans
Served with a cup of Maxwell House coffee.
After class, an apple.
